Morning
Try tsot, a small round bread topped with poppy and sesame seeds, which is crisp and flaky. Sheermal, baqerkhani (puff pastry), lavas (unleavened bread) and kulcha are equally popular, and quite filling, as these usually contain milk and ghee. pink tea gets its colour from the bicarbonate of soda. It is a treat to walk down the road and enjoy a rustic breakfast, amidst the sights and sounds of Srinagar, at wayside bakeries in Lal Chowk and Dalgate. A roadside tea stall is the best bet for noon chai.
Afternoon a variety of rice grown locally – is eaten plain with vegetarian dishes such as gogji razmah (kidney beans with turnip), roghni chamman (paneer in hot gravy), nadir-haaq (lotus stems cooked with Spinach or Radish), or dum aloo (potatoes cooked in a thick yoghurt gravy). Haak saag, a Kashmiri leafy vegetable, is a must especially for the traditional Kashmiri Pandits. Bismillah Restaurant on Jawahar Road is another popular joint. The sweetish Kashmiri pulao, laced with dry fruits, along withdoon chetin or walnut chutney is a great combination. Roadside carts sell plenty of fresh cherries and strawberries for your afternoon dessert.
DinnerA leisurely dinner with rice and rotis usually forms a typical home meal.

Rogan Josh (a mutton gravy dish) is eaten by both the Pandits and Muslims, although Pandits make it very spicy. Matschgand (minced lamb), shab degh or lamb with turnip is a delicacy worth trying. The lamb meat is fresh and succulent. Rotis are usually crisp, as the dough is kneaded with milk. On special occasions, a Wazwan or an elaborate royal meal of 36 dishes is prepared. Make sure you come empty-stomached to do justice to the spread. Food Gali at Lal Chowk and Shamyana Restaurant serve authentic wazwan.
